I'm trying to get caught up on all the recipes I have stashed away and I'm losing ground. Saw this burger a while back that is served on a potato roll, on top of a layer of Bacon Jam, topped with some nice Havarti and finished off with some not so "Secret Sauce". Hint, Chipotle Ketchup and Mayo.
A lot of work but I loved doing it. Here goes.
Edit.... Made a mistake in title line. Should be Bacon Jam, not Chipotle Jam.
Ground the beef, 50/50 Rib Eye and Chuck.
Got started on the Bacon Jam. A pound of bacon.
Removed the bacon to drain on some paper towels and sauteed the onion in the bacon grease. Added some Cattlemen's 8 Second Ride to the onions.
Once the onions were translucent added some fresh garlic and brown sugar.
Then added some black coffee, apple cider vinegar, maple syrup and finally dried thyme.
Reduced over a medium heat until syrupy.
After cooling used food processor to achieve the consistency I liked.
All done.
Got the potato rolls done next.
Got lazy and did some store bought shoestring potatoes in some peanut oil.
