Slow Baby Back Cook on the Performer

The problem is the performer is hard to keep temperatures steady when doing slow cooks especially in the high altitude. It’s great for HH rib cooks and I’ve done a bunch with the method Jim Lampe has described.

So here’s what I did to try and get get a low and slow cook on the performer that would work.
A three wide snake of Kingsford going a little over half way around with cherry wood on top.
One rack of BBs with my own rub.
Lit six briquettes and place three at each end of the snake all vents wide open.
After twenty minutes it settled in at 250 and stayed there for the next 4+ hours even when the wind came up.

2 1/2 hours naked then 1 hour in foil with some #5 sauce then out of the foil and back on the grill with more #5 sauce and let it set up for ½ hour, all indirect.

Great ribs really moist and tender with just a little pull off the bone.

I made some skillet beans on the E320 and Barb made a tangy coleslaw for sides.

I finally found a method that works with the performer, oh happy days.

Great looking ribs Rich. The snake is definitely the way to go low and slow in a kettle.

I'm doing a slab of BB's tomorrow and will probably use the kettle too, less fiddling around than with the smoker.

You're right Bob, I like the smoker but it's a lot more work to set up and also to clean than the performer.
