Searing with the Vortex

I had planned to do chicken parts for my first cook with the Vortex. We had a change of plans, so the chicken parts will be done tonight.

In the meantime, I DID have an opportunity to try the sear function:

This is the Medium Vortex on my Performer with one Weber SMALL chimney of lit coals:



I'm going to sear these two nice smoked pork chops (3/4" thick):



Our dessert is going to be grilled fresh, marinated, pineapple slices with a dip of ice cream:



These, as you can see, are large chops - first side on the Vortex:



One minute, then flip:



On the second flip - nice grill marks:



Total time for the chops is two minutes a side. Now, THAT is HOT! The searing function IS AS ADVERTISED.

Pineapples on the Vortex. Thirty seconds, then flipped. You might note the size of the small end relative to the pineapple slices - you could probably do two more at once:



Finished pineapple waiting for the ice cream. I might suggest that you want to have these warm when putting the ice cream on for the best experience. The lime zest is important to the taste as well as appearance.

So far, the Vortex looks like the "Real Deal". I'll post me chicken cook in a day or so.

I'm not sure which looks best, those chops or that dessert. Fine job on both. Great looking grill marks. I've had my Vortex for a while now and I'm embarrassed to say I haven't used it yet. I think you gave me the nudge I needed.
 
That's a cool gadget! I've seen guys do steaks on top of their chimneys but this looks much easier. Chops look delicious!
 
In the category of "Is my face red!":o I must confess. The first time I lit this, I used the small Weber chimney, lit it with the Performer Gas Assist, then dumped the lit coals into the Vortex. Duh-h-h! Instead, set the Vortex on top of the charcoal grate over the gas assist ( lighting it first) and dump a chimney full of UNLIT coals into the Vortex. It is it's own chimney. I let the gas assist run three minutes, then turn off the gas. When the coals are lit to your preference (about ten minutes), then commence to cook.

It appears, from my VERY limited use and observation, that for most quick cooks, a Weber SMALL chimney provides plenty of briqs for the Medium Vortex. Over the long hall, this thing might actually pay for itself by reducing the amount of briqs you use. Just a thought or two...

That looks delicious and I love the desert. That Vortes is looking quite interesting for sure.
 
Can you sear with the bigger opening on top? Wondering if that was done you could fit two ribeyes over it.

I've only done a couple of cooks with my Vortex, but, frankly, i think it would do just fine with the big end up.

The first of us to try this can report the results.

Hi Robert. Those Pork chops and Pineapple look great. And... your photos made me nostalgic for my youth. Your corel plates were the exact same kind that my parents had when I was a kid in western PA.
 
Robert, those chops look very much like the ones I will be getting while on vacation. The butcher shop is "Plath's" in Rogers City, I'm really liking the pineapple addition, will give it a shot, no Vortex but, will have to make due!
I'm really looking forward to this little project!

Yes you can. I did it last night for sirloins. I pushed the vortex to the back of the charcoal grate on the JJ, I dumped 15 lit briqs into it. Put a lump of hickory on the cooking grate above the vortex. Cooked indirect to an IT of 120[SUP]o[/SUP]f, then seared either side of the steak for 1 minute over the vortex. Perfect. I will not do steaks any other way now.
