The day after Independence Day I had to work early. :(

This was my breakfast of champions. Menudo and a monster drink.

Maribel got the smoker ready for some pork tacos. Used only lump charcoal and all vents for a high heat cook. Half a chimney of lit lump poured on top.

That pulled picture is amazing (but what did we expect) Gonna have to look into getting lumps, that's just an outstanding looking PP
 
Man, I had to go to Google and I found this: menudo is a spicy Tripe and hominy soup known as a cure for Hangovers:) Looks good!

Tony pork tacos look outstanding , Menudo the first time i ever tried it was when I was station there in Berdo at Norton AFB "73" but I still love tacos.
Great cook as always and photos are getting even better hard to believe.
 
Great looking pork my friend, I bet it tasted good, heck I bet the tacos looked killer....too bad we will never know. Take care buddy.
 
Somehow I missed this one. Always been curious about a high heat PP sure looks like it came out great!
