Hello All,
I have been neglecting my grill for a week or so while I dealt with life. Today I cold smoked some bacon in the afternoon and decided to ramp the fire up and hot smoke some wings for my wife and daughter (my boys are away for the weekend at band day and scout canoeing. Anyway I have been wanting to try a variation on my wings routine and see if a hotter approach would improve the skin texture. Here is what happened...

Brined and dusted with Benoits Seasoning

On the Grill Direct to Sear

Moved to Indirect Running Pretty Hot - Cherry Pellets in My New A-Maze-N Smoking Tube on the Direct Side

Taking Smoke Nicely Mid Cook

Resting Prior To Saucing

Couldn't Resist and I ate One Naked (the wing not me) - Great Bite - Good Skin

Saucing Buffalo Style with Plus Five

Plated with Steamed California Mix
I was very pleased with the outcome. The bird was cooked well and the skin was crisp. Cherry smoke is a great pairing with chicken and it works very well with five sauce. The bite was as near perfect as I have come. My wife and daughter really liked them. I still have some things to learn about the A-Maze-N smoker tube but on the whole this was a slam dunk...
