Hello All,

I have been neglecting my grill for a week or so while I dealt with life. Today I cold smoked some bacon in the afternoon and decided to ramp the fire up and hot smoke some wings for my wife and daughter (my boys are away for the weekend at band day and scout canoeing. Anyway I have been wanting to try a variation on my wings routine and see if a hotter approach would improve the skin texture. Here is what happened...


Brined and dusted with Benoits Seasoning

I was very pleased with the outcome. The bird was cooked well and the skin was crisp. Cherry smoke is a great pairing with chicken and it works very well with five sauce. The bite was as near perfect as I have come. My wife and daughter really liked them. I still have some things to learn about the A-Maze-N smoker tube but on the whole this was a slam dunk... Thanks for looking.

Looks great John! Going to try that and see If I can get the same result, my wings are tasty but the skin not so much.
 
Fly away cook John! Love wings but don't get to cook them very often because my wife doesn't like chicken:eek: or spicy.
 
Those wings look great. I've been craving some now that it's football season. Who am I kidding? I'm always craving wings!
