Sam's Club Prime Packer Brisket

Getting a prime packer brisket locally has become a real chore. The only place left is Sam's Club. This was my first purchase. I bought the membership just to have access to the briskets. The price at $4.79/lb is 1/2 what I'd pay online. I cooked it on a 18.5 WSM with FireBoard 2 Drive and Pit Viper fan. Simple salt and pepper rub. Foiled it at 165 degrees in the point and put it back on until 190. Then it sat in a cooler for two hours. Good bark, moist, and tender.

Bark had the right color, looks like a meteor.

Sam's prime is about the only brisket I smoke , anymore. Unless I can catch a good price on a Creekstone.

How big was your packer? Did you go high heat method?

Just wondering - cuz I'll be doing a brisket on my 18.5WSM for 4th of July.

15.4 pounds. I do 225 Degrees the whole way. I wrap in foil when the internal temp in the middle of the deckle is 165 degrees and put it back on the smoker till 190 degrees Cook time was 8 +1/2 hours. (33 minutes/pound)Then it goes in the cooler for an hour.
