As most if not all you saw, Robert recently posted a thread that included "a bath" for the cook. He used Beef, I used (boneless) Pork Butt. I don't mind saying, the bath is key. These Tacos are without a doubt the best I've ever made

This is a must do again, the flavor was insanely good - Thanks Robert, fantastic cook / idea. The secret is pulling the meat in the bath. The flavor is beyond words
 
I did this cook on my 22" WSM, I tried using my 18" charcoal ring instead of the 22" ring. I basically was burned out at 5PM, only getting only getting 9 hours out of my 22" WSM. This is only the 2nd maybe 3rd cook, so it still needs to build up gunk to seal it up. I don't think I'm anywhere near seeing a 12 hour cook out of this beast. It was spent at 9 hours

Looks super, Chuck! Porklicious looking tacos. I've gotta try that with pork.

Glad you like "the bath". Hope you used lots of chipotle in adobo & a beer.

I kept pretty close to the recipe, I probably used a little more than half the can of Adobo, I have to tell you, these tacos had some bite to them. The bath is the secret, I do look forward to trying this cook with a chuck roast, but I just had a feeling that Pork Butt would equally nice.



The "Bath"*:

4 cloves garlic, minced
2 chiptoles in adobo sauce, chopped (I used 1/2 a 7 oz can)
1 small white onion, finely chopped
1/4 cup fresh lime juice
2 tablespoons apple cider vinegar
3 bay leaves
1 Tablespoon ground cumin
1 Tablespoon dried Mexican oregano
2 teaspoons salt
1 teaspoon black pepper
1/4 tsp ground cloves
1 cup beer (or beef broth or water)

Thanks Jeff, Dustin. I highly recommend this cook / bath method
 
Definitely putting this method on the list!! Next time I get a crowd together, I'm thinking we need both the beef and pork! :)

fwiw - next time I make it, will use a 12oz beer instead of a cup.
I did use a whole beer, not just a cup. I used a Trader Joes version of Corona (which is probably bottled by Corona under a TJ label) looking forward to leftovers tonight

I used a MGD. I won't drink it. I keep it around for my SIL - it's her drink of choice. Was too lazy to go to the store for Mex beer.
