Roasted Corn and Black Bean Burritos

A cook I could have done on the stove but wanted to burn some charcoal since I haven't done so in a while.

First I would like to introduce my new grilling buddy Leah, she is a 8 week old Golden Retriever we just got this past weekend.


Roasted some frozen corn in a CI Skillet


Sauteed a chopped onion then added some leftover rice, 14 oz can of crushed tomatoes, 4 oz can? diced green chilies, taco seasoning, a little water and 2 14 cans of rinsed black beans.


Dressed my burrito with sour cream, cheese, salsa, Sriracha and the been mixture, Made for an excellent burrito.
 
The burrito cook is amazing, excellently done John! Congrats on the pup, she's a cutie. I only caution you this. Golden Retrievers are puppies for about 5 years, give or take a day or so, LOL
 
good looking pup! I had 3 golden retrievers growing up. My mother would only allow females, we had Brandy, Casey and Callie. Great dogs!
 
John glad to see you back and that burrito is awesome. Now to the puppy, Leah is a cutie for sure. Be sure to take LOTS of pics to share with us. As for being a puppy that will go on for about 5 or so years. You will love them all. After having 5 Goldens they are the best. Whitney is part Golden so she counts some and she is also a sweet heart just like the Goldens. Again glad to see you back.

Leah is a cutie, but beware Goldens are known as the clowns of the dog world for good reasons. If not entertained and being with their family they will entertain themselves. We have had Golden Retrievers for the last thirty eight years all rescues. Be prepared to have a four footed furry teenager for the next few years, but just try and get the smile off your face. Whitney our current rescue is the first non pedigree Golden we've had although she is part Golden. Goldie's are wonderful companion / family dogs, great choice.
