it's been a long time since I've cooked over charcoal, but glad I did. First thing I did was mix up a jar of SPOG & seasoned the steak with it and left it out on the counter for 1.75 hrs before it hit the coals. I sliced half an onion & a few mushrooms & put them on for about 10 minutes before the steak, but they could've gone on about the same time, really.

I only used ~3/4 chimney but that turned out to be enough. I cooked direct with the lid off in effort to get the hottest fire & best sear and I'm happy with how it turned out. I think it went on for ~9 minutes total.

the onion/mushroom just didn't do it for me as a side. Not sure why, but I'll be trying something different next time.

That's my kind of cook! Beautiful Rib Eye, Shrums & Onions in the CI on the grill. That's how it's done
 
Nice looking rib eye Clint. I hate firing up a charcoal grill for a short cook except for a steak I always grill those over charcoal if I can.
Barb makes a mushroom, onion and adds large chunks of red potato skillet. Cooks it in butter and gets the potatoes browned up, really goes well with a steak.
 
Clint, that steak is awesome, done just the right way. I do agree a nice baker with all the good stuff would be perfect. Great looking steak for sure.
 
Good job, Clint. Great to see you are off-gassing. Really like that steak!

The thing that was most remarkable to me was the technique & the sear. My go-to way to do steaks has been to use at least twice as many coals, piled high near the grate, and cook with a closed lid. This time I had a chimney (just 1) that was 80% full when I lit it, it was the Charley Brown (puny) fire. But the sear........ I don't think it came through in the pics.
