Folks, I have a whole 7 pound yardbird for dinner TONIGHT.

I am going to use the 22" WSM without the waterpan (high heat, 350 or higher).

Plan right now is to use ALL LUMP charcoal with applewood for smoke.

QUESTION:

Should I keep it whole and lay it breast side up?

or

Should I spatchcock it and lay it insides down?

Time is no issue. It's Sunday.

I'm leaning towards the spatchcock cut...

If you don't hang it, I like the spatchcock method vs whole for bigger birds. (I prefer to cut them in half and hang the over an open fire)

Funny Yardbird response above Lol ^^^, but what about using a Cajun Bandit Rotisserie for the WSM if you have one.....Just saying.

What JRAiona said Dwain said. I always split them (and then they fall apart into quarters darn it). Can't hang them since I don't have anything to hang the from.
