Porterhouse steak

Last week, Creekstone Farms had a sale on their Natural " Choice " Porterhouse and T-Bone steak. It was four approx 24oz steak for $99. I bought four of each and grilled a porterhouse last evening. I'm really happy with the marbling, this has to be very close to prime.

Dri brining with kosher salt , they were exactly 1.5" inch thick, I did not weigh this steak.

Starting 10 Cowboy briquettes for the Kettle. Its hard to start just 10, so I put a tomato juice can with both ends cut out, inside of my Junior Weber Chimney. It goes faster.

And on the Kettle to smoke indirectly, using oak chunks with the 10 briquettes. Kettle ran at about 210*

At IT of 115, it went on the Spirit E310 to sear on my CI griddle.

Lynn.... Don't you know it's unfair to not let your buddies have a taste of that delicious looking steak.... :)
 
That is a beautiful steak, and the fact that I had leftover spaghetti for dinner has nothing to do with my opinion. ��
 
Very nice technique - you're more patient than me! I've seen very similar sears on my steaks on occasion.

Now I'm jealous.
