Pork Steaks to Celebrate the 250th Birthday of St Louis

French fur trader Pierre Laclède founded St Louis on February 14 or 15 of 1764.
I doubt if pork steaks were on that night's menu, but they have been on most backyard grills since the mid 1900's.

From the local newspaper's food section:

<The settlers loved catfish from the rivers, which they would sometimes smother with sour sorrel and fry in oil from bear grease — “it was as much appreciated as extra-virgin olive oil is today,”
and settlers raised plenty of pigs and chickens. Wild honey was easily found, and maple trees were tapped for syrup.>

Okay, that was a little history filler for my 3 photo Sunday cook post. :)
In my defense, we lost our electricity about dusk when the 'steaks' were almost done.

Treated with Tasty Licks rub, and with MO hickory for smoke, they cooked indirect using the local lump charcoal Rockwood.

Lights went out right after this shot, and I was building a fire in the fireplace, and fumbling for flashlights.
So no pics of them "Bandana's sauced" while on the grill.

Thankfully the power was only off about 1.5 hrs. and we didn't have to eat by candle or fire light.
That stuff's for young folks anyhow.:p

Pork steaks, always good for breakfast, lunch, or dinner!

My motto is be proud of where you live, where you're from, or both.

Bob, thanks for the history! I was born in St. Louis, but Dad's company transferred us from Missouri when I was 8 years old. I have the family slides and found a few of Dad cooking pork steaks on the banks of the Jack's Fork River in Eminence, MO in the 1950's (we vacationed there every summer). After we left Missouri pork steaks were a staple for us no matter what state we lived in. Dad is 89 years old now...we're going to see him in WA state this summer. Think I'll buy some pork steaks and fire up whatever grill he owns....
 
Those pork steaks look delicious, who needs lights, makes it easier to sneak pieces of that awesome looking pork off of other people's plates.
 
Nice looking pork steaks despite your obsitcles you pulled it off!! Actually pork steaks by candle lite sounds kind of nice!!

I'm with you about the pepper Bob, but I have been using Mrs. Dash Table Blend for
the past several years and since I started using it I have not been hitting the salt shaker. There
is no salt in Mrs. Dash, but the different pepper flavors are super!

As usual, a FINE job regardless if you had light or not. Losing power is not much fun in bad weather. In good weather it's just a minor inconvenience but in the weather we've been having, "Not so much!":mad:

As a result of your influence, pork steaks on the grill are on our permanent menu and we are MUCH the better for it!:o

Same here since my cardiologist put me one a low salt diet it's been Mrs. Dash for me. BTW Mrs. Dash Chicken rub is very good and I don't miss the salt.
 
Those pork steaks do look great, unfortunately when I asked our local stores meat cutters about them I get the deer in the headlight response, seems like it’s still a Midwest thing not well know in the Southwest yet. At least where I live.
Next time they have pork butts on sale I’ll ask to have them cut into steaks and see what happens.
My favorite response when the lights go out is “Oh s... nobody move"
Of course when its pitch black my two 100 pound Golden’s think that’s a great time to go wondering around the house, makes it very interesting.
 
Looks really good Bob...Would love to taste a PS cooked by you. "then get your *** over here" - Yeye. We are actually looking for a trip plan for a US vaccation atm. But there is so mutch we wanna do/see. And the distance between em is rather steep.
