Thanks, that Q1200 does real good, I cooked those at about 500, and it has no problem hitting 600+ for steaks.

I like marsala in cooking
Gotta use it again, haven't had any saltimbocca (a la romana) for a long long time
 
That looks great! I agree on grilling for the Marsala recipes. Much better that way.
