Polish Taco

Just me for dinner, time to try the Polish sausage purchased at Costco.

6 lit in each basket for a gentle, non-casing splitting cook.
Small chunk of pecan wood.

From the ground up, 1/2 of the link cut in half for each taco, Hatch green chile sauce, cheese, tomato, topped with crushed pork rinds.

This morning's Taco McBob. After a quick discussion with my stomach, I decided to forgo the chile sauce.

It's some pretty darn good sausage.

With a subject like "Polish Taco", I was expecting to see a tortilla wrapped inside of some kielbasa! But this looks much better.

when i read this i thought oh no Bobs making a upside down Taco or something like that, But you did good Bob i love to buy these then put them on the smoker (WSM) for a while like a hour or so then you can use like you did or many other ways, these look great i like both but the melted is mouth watering.

I've had the Evergood Sausage from Costco, but not the Greenridge, Greenridge on to to do list. Fantastic Photos Bob, count me a fan of the Polish Taco
