That pie is a beauty, Bill!! I love to combination of toppings. What kind of dough did you use??

Thanks Rich, I really like Peter Reinhart’s cold rise dough. I normally refrigerate 3-5 days.

 
That sounds and looks amazing. A great combo of flavors. How'd you get a stone on a Performer to 750?
Thanks Jim, actually cracked a couple stones before I figured out that if I slowly preheated the stone on the Genesis then transferred to the coals it would hold. Charcoal makes for a tastier pie in my opinion. Wife just installed granite countertops and I kept the sink cutout. Going to try to cut that and use as a stone. Will post results here when complete.
