@ Jim: Matställe its a dream but its different to make 1 great meal on time then serving 100 perfect ones.

@ Rick: We bought a full Tender loin,but since we only made 2 plates we trimmed the loin and cut out a peice of the center. Only to get even peices. A flanksteak cut in half filled the same way would be just as good. Be sure to cut it across the grain in the last step thogh.
