Pies for Thanksgiving

Spent a good part of the day doing prep work for tomorrow. Also, did this years pumpkin pies on my 18" WSM. We're having two Thanksgiving dinners, one tomorrow and another on Saturday. Was going to include these pic's in my Holiday post but decided to get this out front. Mainly wanted an opportunity to wish all my friends out there a safe and happy holiday. Well, here goes.

Two crusts from scratch.





Ingredients for the filling. Ignore the ground cloves. Did not use those.



Getting it all mixed up. That's one whole egg and three additional yolks.



Ready to go.



On the WSM. Kept it at 425 for 15 minutes, then dropped temp down to around 350 for another 35-40 minutes.



All done.

The only thing those pies need is some whip cream and a tumbler of "adult" egg nog :)

Pies look great Cliff, Barb and I did the same. Barb made cardamom bread, pumpkin pie, prepped the veggies for the stuffing. I made a breakfast quiche and smoked the turkey from hell. So we're on cruise control for T day.

Outstanding pies Cliff, just slice a piece add ice cream and WOW!! I would have done mine on the Performer but we were having enough problems getting the turkey done. Thanks for sharing them with us and wish you and your family a Happy Thanksgiving and a safe one.
