Pepper Stout Beef

This is my first try at the Pepper Stout Beef reciped made famous by Larry Wolfe.

Started with a 3 lb chuck eye roast seasoned with S&P:



Loaded it onto the WSM with some Hickory and a left over pecan chunk from Thursday:



Pull it at 165. Good thing because a wicked storm rolled through 5 minutes later.



Into the pool it went with the peppers, onions, gaaaaaaalic, Guiness Extra Stout and worchestshire.



Foiled it up and into a 350 degree oven. Checked it after a couple hours, ready to pull apart:



Back in the oven without the foil to firm it up. Man my house smelled good at this point.

Finished product:



On a torta roll with swiss cheese and horseradish sauce.



The sides never made it to my plate. Holy heck is that a good sammich! Everyone should have one.

Agreed, I think you nailed your first attempt. You can never go wrong with a recipe that calls for part of a beer.
