Our Happy New Year Rack of Lamb

Still freezer diving and way in the back I found a Rack of Lamb from Costco that I bought a while back. It sounded really good so I thawed it out and grilled it up. Sides were Grill Roasted New Potatoes and a Grilled Asparagus Medley.

This recipe is Pistachio Crusted Rack of Lamb. Here are the ingredients. The items in the bowls are whole pistachios, grated parmesan, bread crumbs, minced garlic and minced fresh rosemary. The rub is Oakridge Black Ops and the sauce is Slow Gold Mustard Sauce.



Used Food Processor to combine and process the pistachios and parmesan. Combined rest of ingredients (except for the Mustard Sauce) and added to the pistachio mixture.





Combined the Asparagus Medley ingredients. Included are asparagus, sliced red, yellow and green bell peppers, fresh mushrooms, chopped tomato, sliced onion, one small can of sliced olives and minced parsley.



Prepped Baby New Potatoes.



Put sides in the fridge and got to work on the lamb. Did a little trimming, but not much.



Seasoned rack with the Black Ops Rub.



Gave rack a good sear on our large Lodge Skillet.





Returned the rack to the kitchen. This was all coming together around the same time. A bit hectic. Foiled the veggies and placed on grill over indirect heat.

Ditto the potatoes only over direct heat.



Back to the lamb. Slathered the seared rack with the Slow Smoke Gold Mustard Sauce.



Then coated the rack with the pistachio mixture.



Finally returned the rack and returned it to the grill on indirect side of split zone. Cooked to an internal temp of around 120.



These baby new potatoes cooked quickly. Pulled and foiled.



Veggies done too.



Lamb up to temp in around 15 minutes.



Let the rack rest for about 10 minutes, then sliced it up and plated.



Let me tell you, this meal was delicious. The lamb was wonderful, especially with that pistachio mixture clinging to it. The veggies were just amazing as well. In addition to the ingredients mentioned above, there was also salt and pepper, lemon pepper and dill weed blended in. Will be doing this again. The grill roasted potatoes were an old Weber recipe I've been doing for years and also one of my favorites. This was my first cook of the New Year. Thank you once again for looking.

That is a very busy & what appears to be a pretty difficult cook. That said, that plated picture say it all. Looks amazing

Nice looking rack Cliff (always wanted to say that ;) . I love pistachios but just a question: can you taste pistachio or is it more just a nutty taste?

Glad you like my rack Len! ;) Interesting you asked about the pistachios. I love them too and was one of the reasons I was drawn to this recipe. I can't honestly say that I would have thought it was pistachio immediately after tasting. The overall flavor that is immediately tasted is the combination of the rub, mustard, the nuts and of course the meat. It was such a wonderful blend that it may have taken a minute or two to ID them as pistachios.
 
Great job Cliff. That lamb looks perfect. You have inspired me - I am going to try a RoL soon.
