Inspired earlier in the week by Brett’s cook. Was looking for a very different Thanksgiving experience and this fit the bill! Woke up to a very damp, foggy and cold morning. Got the coals going on the Perfomer bright and early!
Marinated the 7.5 shoulder the night before and did a nice rub that I made as well!
Threw it on with some pear and hickory and cranked it up to about 300 to get the day moving!
Made a nice little creation for once the bark had set!
Transferred it over to the Gold B when it hit around 160 and covered it and poured in the hooch!
I made the beans on Wednesday night. Got them reheated and prepped the sweet potatoes
and slaw! 
Pork was done after 7 hours!
Pulled it into some meatier sizes chunks. It was moist as can be.
