Seasoned the smoker with some bacon strips/rubbed the inside down with bacon fat before my 1st cook

Smoking a 6lb brisket to break the smoker in. (1st time EVER doing a brisket)

Injected with root beer & apple juice

Rubbed down with SM Cherry & one of my own made rubs. Left overnight in the fridge

Next day a lil more rub added, letting the brisket come up to room temp before hitting the WSM

Doing the minion method with hickory and apple wood

Popped on the smoker for 4 hrs before foiling. Ran at a temp of 250-275

After 4hrs and ready to hit the foil with apple juice and dos equis amber for another 2hrs

After 2hrs foiled I took it out and popped it back on the grill for 30min and added some more smoke

So my 1st cook and brisket ever was a success! The brisket was juicy, tender and the only thing I would do different is maybe cut back on the rub a bit. I love my new WSM! Thanks for looking;)

Thank you Bob and yes definately. Looking into picking up another 22 next month so I can really get things going. This is what I was cooking on before, its called an Orion Covection Cooker/Smoker...I'm never going back! lol

That Orion looks interesting. How does one fit all 4 turn-in inside that thing...

That Orion looks interesting. How does one fit all 4 turn-in inside that thing...
Bob, the orion can hold up to 6 racks of ribs, hanging and also has 2 grates that can hold 1 8-9lb butt or meat similiar in size. It has a water pan that I would fill with juices & fruit slices. Its a very tight squeeze so for my 1st comp I used 2 orions.

The orion to me is more of a fast cooker with no way to regulate the temp like WSM. I do get the smokey smell but not as much as I did with the WSM. Charcoal goes on the outside and the wood chips inside between the water pan/orion.

I think it would be hard to try to do all 4 meats using the orion, although not impossible just alot more work imo. Pics of my ribs after taken out of the orion and then back on the grill to tighten them up

Im doing my first racks of ribs on the WSM this weekend and cant wait to see the results.
 
Great looking Ribs and turn-in box ! Looks like those Orions, in the right hands, do very well. Congratulations.
I understand those same hands do well with Tri-tip. Mariposa ?
