Hopefully a few have been worthwhile.
First to set the mood with the original version.
I bought a Santa Maria grill from Costco last week, and did a KBB burn in it to prepare it for Sunday's cook.
Picked up some hickory wood.
On Sunday I fired up some sparkling Cowboy lump.
Seasoned a trimmed tri tip with salt, granulated garlic, and pepper only.
Burned down some logs.
It looks small on the 20" X 30" grate.
Cooked a little bacon and onion on the Performer.
Added stove cooked pinquito beans and a can of hot Rotel tomatoes.
Used a piece of peach wood to smoke 'em.
T-tip done.
Served with garlic bread and fresh made salsa fresca.
Everything was excellent, one of my best tri tips yet!
My Maria won't replace my Weber grills, but the wow factor, and playing with fire makes her a great addition to my addiction.
