Monsoon Rain and Chicken Pot Pie

My intent was to do this on the Performer but with 4 days of monsoon rain that was out and the gasser on the patio was by the water spout, just too much wind and water pouring off so into the house.

My ingredients for the chicken pot pie and I used my recipe for the crust. Rolled out crimp edge and then into the refrigerator about 15 min. Brush with egg sub into oven for 10-15 min at 400*. Let cool while mixing everything else.

Used our 10 in. CIS melted butter, added carrots, celery, and onion, S&P cooked for 5 min. then added thyme and flour cook 2 min. more. Next added broth, brought to a simmer then added chicken cook till 160 and sauce had thickened 10-20minutes. Took chicken out shred into bite size pieces and add back with everything else.

Added crust and into oven for about 10min at 400* then on broil for 3min.

Plated and man was it good.

Barb that is some delicious looking comfort food! It looks wonderful. I like how you made it all from scratch. Great job!
 
Pot pie is one of my favorite things and yours looks fantastic Barb. 106 today and then it's going to get hot starting tomorrow. Weather Channel says 113 by Thursday. Like Robert, I'd take that rain too.
 
Looks fantastic, Barb. Haven't had pot pie in a loooong time, and yours has me looking for recipes! I also like that it's all in one pan.
 
Barb thats a great reason to use that thing called the oven, chicken pot pie made from scratch ....i'm all in.
I'm sure you and Rich have tried the chicken pot pies at Erick Schat's Bakery in Bishop Ca. they would be a close second.
