Memphis-Style "Dry" Spares

Those ribs look about as good as it gets. I have done "Memphis Dry Ribs" from an American's Test Kitchen recipe and REALLY like them. However, my wife prefers Loin Back Ribs ala Harry Soo, so I tend to do those more often.

Both styles can be excellent, so it becomes a matter of preference (or mix 'em up and satisfy everyone:rolleyes:).
