Meatballs and Soup

Yea thats right, I can be flighty. Had a hankering for a Kale and Mushroom Soup I made before and had a bunch of veggies and shrooms that had to be used.

That simmered away for a couple of hours and then on to the original plan for diner tonight, home made meatballs, some veal,pork,beef mix with scallion, red onion, sage, oregano, S&P, and nothing else. On the Genesis in the CI while the Tomato Sauce simmered away on the side. Meatballs added to finish in the sauce

Some fresh pasta in the water for 3.5 minutes and there you have it with a glass of Sangria from yesterday, your plate. Enjoy

Assume! My folks have those bowls that you have the spaghetti in. It's like being home again, lol

Did you make the fresh pasta as well? Looks mighty tasty!
 
Thanks Cliff the soup is, if I say so myself freaking outstanding, even #4 Child had two big bowls.

Ed I did not make the fresh pasta, bought at Shop Rite

Soup recipe

Two Quarts Chicken stock, one quart water
Spanish hard Chorizo slice into thin pieces
Four large carrots sliced
Two stalks celery
One large yellow onion
Two large packs of sliced Mushrooms of your choice
Two large potatoes diced up small cubes
One can white Cannelli Beans
Three cloves of garlic diced up
Sage, Oregano, S&P, and crushed red peeper flakes to taste
1/4 cup good red wine

Onions on first in the pot with EVOO, after softened add garlic, after cooked down with some charred parts deglaze the pot with the red wine
Add the rest of the veggies and stir in and mix well
Add stock and water, stir well and let simmer down for at least an hour or two
Last hour add two large bunches of Kale, sliced up into large pieces.

One of the healthiest and most delicious things you will put in your tummy
 
Thanks so much for the recipe, Bill. I guarantee it will be a go. I am a huge soup person, my wife too. Particularly in Fall/Winter, but anytime is always fair game for a delicious soup.
 
That is one great looking meal. Thanks for sharing the soup recipe. I'm going to have to try that one.
 
That is an interesting combination of flavors you got going there. I never would have thought of it, but I know I would like it. As always, nicely done Bill!

Barb add one egg and some bread crumbs and a couple of tablespoons of milk to it. I was out of eggs and milk and plain forgot the breadcrumbs. Might of been some Sangria involved.
They are real tasty without but a little tough compared to the other ingredient version. Just thought you should know
