Looky what I found at Costco


 
Never had them how do you cook those Larry?
Similar to pork spare ribs. Low/slow. My rub is typically only S&P. I see no reason to hide the good flavor of the beef under a bunch of spices and sauces. When I can find it I really enjoy them over cherry or oak but both are hard to find in chops for the gasser. So I tend to vacillate between mesquite (light mesquite) or hickory. Sometime a mixture of the two. But really they're not too hard to cook.
 
Around here beef plate short ribs are the unicorn of meats. Even Safeway where Barb works never has them. I'll try Costco but not expecting them to have any.
