Similar to pork spare ribs. Low/slow. My rub is typically only S&P. I see no reason to hide the good flavor of the beef under a bunch of spices and sauces. When I can find it I really enjoy them over cherry or oak but both are hard to find in chops for the gasser. So I tend to vacillate between mesquite (light mesquite) or hickory. Sometime a mixture of the two. But really they're not too hard to cook.Never had them how do you cook those Larry?
