Lamb Rib Rack Dinner

Picked up some New Zealand Lamb at Costco for a nice price and here is how I did them
Herbs from our garden, fresh Rosemary and some dried Thyme and four cloves of garlic diced up small and mashed together. Rubbed all over the rack after scoring the fat side.

Into a bag with about three tbsp of EVOO to marinate for a few hours. Then the meat brought for 1.5 hrs. to come to room temp

Idaho's diced up and one Red Onion, EVOO, Kosher and fresh ground along with our dried Oregano.

On the OTG over lump and about done, will put under broiler inside to brown while the rack goes on the grill with the bones covered in foil

Pulled at 125 IT, the smell is driving me nuts. Foil tented for 15 minutes to rest inside

Gus done in the steamer with EVOO Kosher and fresh ground. On the plate with a nice Italian red

You and the CEO sure do it up right!! Never had lamb, but I would sure love to pull up a chair to this meal, Bill.

Always enjoyed listening to Hall & Oates, and have seen and enjoyed listening to Daryl do his thing at his place with other musicians.

Very nice Bill, looks great. My wife grew up on lamb, she said it looks way better than she ever had.

Great looking lamb Bill. Had the Indonesian Rack of Lamb the other night in a restaurant and now, after seeing yours, I'm ready to do it again.
 
The combination of garlic, rosemary, and thyme is always a winner. Rack o' lamb at a good price is always a no-brainer purchase for me. The photo after carving is quite appetizing — makes me want to reach into my screen, grab one of those chops by the bone, dip it in the lamb juices, and eat it by hand. Another extraordinary meal, Bill!
 
Bill, you nail that one for sure looks fantastic. Haven't had lamb in years but I remember it was delicious.
