Picked up some New Zealand Lamb at Costco for a nice price and here is how I did them
Herbs from our garden, fresh Rosemary and some dried Thyme and four cloves of garlic diced up small and mashed together. Rubbed all over the rack after scoring the fat side.
Into a bag with about three tbsp of EVOO to marinate for a few hours. Then the meat brought for 1.5 hrs. to come to room temp
Idaho's diced up and one Red Onion, EVOO, Kosher and fresh ground along with our dried Oregano.
On the OTG over lump and about done, will put under broiler inside to brown while the rack goes on the grill with the bones covered in foil
Pulled at 125 IT, the smell is driving me nuts. Foil tented for 15 minutes to rest inside
Just how I like them
Gus done in the steamer with EVOO Kosher and fresh ground. On the plate with a nice Italian red
For those that may not know Darryl Hall does a series of music at his home in which invited musicians and fantastic performers come together to do all kinds of music for their own enjoyment. This is one of my favorites, enjoy
