Lamb Chops and Eggplant Parm!

Hope everyone is enjoying their Holiday weekend.
My wife was away for the past week, visiting her parents in the Smokeys. I thought I'd welcome her home with some home cooking/grilling. We have a tiny veg garden, but its nice to harvest when we can -- herbs, tiny potatoes, tomatoes, etc. These eggplant were bought however.
I've made eggplant parmesan on the grill before and I like the result. Easier and neater than deep frying too.

Grill 'em.

And assemble. Ready for indirect cooking. Fresh mozzarella, and basil from the garden.

A bit blurry, but after 30 minutes covered with aluminum foil. Gave her another 10 or so uncovered.

Boil some small potatoes and set aside. Then saute with rosemary, shallot, garlic, capers. Add some broth and sliced plum tomatoes. Simmer until happy. Add some grated parmesan reggiano. Love this.

Marinated the lamb rib chops and some boneless chicken thighs (for sammies for work) in a sprinkle of salt and Janelle's homemade pesto. I made these lil' lamb chops earlier in the week for me alone. Killer!

These babies grill up in seconds.

And your plate. Salad is mescaline mix from the garden, including several lettuces, baby red kale, arugula.
And yes, you can have more lamb pops. ;)

Gary that plated pic is a work of art!! Nice buddy! I have never tried eggplant...might have o give it a whirl!

Those chops are looking crazy good!
 
Great plate! The eggplant parm looks like it could be a meal by itself - I don't think I've ever paired mescaline with lamb chops - bold move!

(liz was cleaning Basil from our garden this morning and I can STILL smell it in the air...)it's WONDERFUL!

Never been a big fan of eggplant, but I'd dig into this in a second, and the little lamb chops I'm sure are just amazing!! Beautiful cook, Gary!!
