Our Labor Day cook was interesting, started out as a nice day with no rain in site or forecasted, I should know better.
Did a slow cook for the Baby Backs with cherry and pecan for the smoke because I wanted to try a new BBQ bean recipe I made up. Put the beans below the BBs in the Dutch oven with no lid so they could get some good drippings. Put the lid on when we foiled the ribs to keep them moist.
Of course about half way through it starts pouring and windy, even with all the vents wide open the WSM would only run at 175. So had to take it apart and move it to the covered patio. After a half hour it was chugging along at 250-260.
Barb made a potato salad as a side
Also did a roti chicken on my old 1000LX for future meals.
The ribs and BBQ beans came out great the ribs were tender with just enough chew and very flavorful.
The beans were outstanding with a nice smoky flavor and a little heat from the pepper and sriracha sauce.
Of course Barbs potato salad was great also.
The players for the beans fresh pintos, great northern and small red beans soaked over night and simmered for 1 1/2 hours.
Onion, pepper, bacon and diced ham cooked until tender.
