Kettle Ribs

Had a hankering for ribs for lunch, so decided to do a HH approach on the performer. In the past, when I've done ribs in a similar manner, I've used baby backs, as they tend to be a bit more tender after a short cook time. All I had was spares on hand, so went with that.

Tried to do a MM start (hit two spots with my torch), but was unable to really control temps too much, and the lid therm settled between 350-400 (fine for me, had work to do, so wasn't going to fuss over it.) After 90 minutes, I foiled for 45 minutes, then went another 45 unfoiled.

Not bad at all. Not competition tender, but reasonably well rendered, tender not mushy, good smoke...... I scratched the itch, and consider this a successful quick rib cook.

Your Ribs Look GREAT!

going HH, I prefer baby backs and saving the spares for the more traditional approach of BBQ...
but if spares are all you got, Roll With It!

Thanks, guys. Sometimes it's fun to just let the grill do what it's going to do.....well, as long as it turns out, anyway! :)

JL, I'm with you on BB's for this type of cook, but I'm not complaining.....neither will the kids when they discover there are leftover ribs in the fridge!

You answered a question I've had for a while. I do HH on my BBs all the time with great success, but was wondering how spares would work. Like you and Jim said better to do spares the traditional way, but in a pinch you can do spares with HH.
