Had a hankering for ribs for lunch, so decided to do a HH approach on the performer. In the past, when I've done ribs in a similar manner, I've used baby backs, as they tend to be a bit more tender after a short cook time. All I had was spares on hand, so went with that.
Tried to do a MM start (hit two spots with my torch), but was unable to really control temps too much, and the lid therm settled between 350-400 (fine for me, had work to do, so wasn't going to fuss over it.) After 90 minutes, I foiled for 45 minutes, then went another 45 unfoiled.
Not bad at all. Not competition tender, but reasonably well rendered, tender not mushy, good smoke...... I scratched the itch, and consider this a successful quick rib cook.
