Made my way back to charcoal last year, finding WSM 18", blue kettle, and performer - all on Craigslist. Then found a Q1200 at Target for 1/2 price.
Used the blue kettle, and the WSM almost exclusively. Used the performer sparingly, and never got the Q1200 out of the box. Have much benefitted from the experience and recipes on the board. Lots of smoked salmon, and a wonderful brisket on first try for Christmas meal.
Thinking about getting rid of the performer since I so rarely used it, and it is taking up good deck space. I know most people love their performer, but I tended to start my charcoal in a chimney (no baskets) anyway.
Also thinking about getting rid of the Q1200. Bought it thinking it would be nice to have gas convenience during the colder months, but it was never a big deal to just use the kettle.
For people that have all of these - how do you use the multiples? People with both charcoal and gas - when are you using gas vs. charcoal.
Any thoughts on keeping or culling?
