Over on another forum I'm a member of, Homemade Sausage Making, they have a beginners project (or hone your current skills) on sausage making. Teaching the basics grinding, mixing, stuffing, curing ...

Anyway, once the pork butt and beef chuck were ground and mixed up, I mixed in some chopped roasted Hatch Chile's. Then fried them on the gasser with a skillet.

They were really tasty.

Man! I wish I had more room so I could grind my own - no place to hide the machine. That plate looks delicious!

Thanks everyone, they were very good. It's the first time I have used Soy Protein concentrate. It does retain moisture, the burger were very juicy, even the next day.
Best burger I have seen in awhile! Mustard?
It's Southwest Spicy Mustard from Wally world.
