Hasselback Chicken

A little messy trying to put slices into chicken breast’s without going all the way through. Wet brined the breasts for about an hour first. Thin sliced onions and peppers in the chicken slices, drizzle veg oil, sprinkle some fajita seasoning, and onto my Weber kettle with SnS using lump for fuel. Last 5 mins of cook, sprinkle some Mexican cheese on to melt. Delicious! Just like a fajita.

I have so many questions as the veggies are loaded with water, but the chicken cut like that would loose moisture....
Do it Chuck.......then post it.....
I still like that fire, I rarely cook with a fire like that but I know how it cooks!
Sometimes I toss thin pieces of fresh jealous devil on coals like that, it give off a bit of great flavor.

If you do hasselback, you probably know about this, but worth saying. When I first heard about hasselback potatoes, someone suggest putting a small, thin carving block on each side and slice down to the blocks. Works well on potatoes, but I expect chicken breast would cooperate less and maybe that's what you meant.

I give you a daily A for a cool idea and actually pulling it off. Not an easy feat I'm sure.
I would of had to buy more chicken, or some super glue....>>>>Bacon ..:)

We use chopsticks. they work good. With chicken I found that squeezing the chicken breast together helps when slicing. Like putting it in a vise.
