We had a busy 4th even though it was just the two of us.
It look like it was going to be a bust because just 5 minutes before I was going to light the WSM and the performer the monsoons kicked in and it started to pour. But I lucked out and it stopped in about 10 minutes.
We did a rack of back loin ribs on the WSM with peach and pecan for the smoke. Chicken thighs and corn on the performer with cherry for the smoke.
Had the roti going on the Genesis 1000 with a whole chicken with hickory for smoke for use later in the week.
Barb did ABTs on the big gasser. Also made homemade BBQ beans and Barb made a pasta salad.
Tried the Harry Soo method for the ribs 2-1-30 min at 275 instead of 3-2-1 because of the smaller loin back ribs I was using instead of spares. They came out great.
Used my rub for the ribs, kickin’ chicken for the thighs. The roti bird got Mrs. Dash chicken seasoning and Weber’s garlic and herb.
It all came out great. Hope everyone had a safe and sane 4th.
