Grilling on the WSM

We did a quick meal using the WSM.

Chicken thighs seasoned with chef Merito fish seasoning and webers zesty lemon.

Used lump charcoal for fire





This took me about 1 hour 15 min. For the first 30 min I was turning them every 5 minutes. Then the lid went on and turned every 10 minutes until it reached a safe internal temp.

Great plate T&M. I've been doing the WSM as a grill with chicken for a while now and really like the way the chicken turns out.
 
Everything looks good Tony. Do you still use the top grate for cooking or do you remove the center part of the smoker and use the charcoal area and the lid?
 
Looks great but I have a stupid newb question...

Whats the reasoning behind grilling on the WSM as opposed to one of your other grills?
