Grilled Veggies-which do you like?


 
I love just about any grilled veggie, and there are a ton of good ideas listed that I have yet to try. I've done summer squash (yellow and zucchini), potatoes, sweet potatoes, asparagus, carrots, corn on the cob, stuffed bell peppers, stuffed jalapeños, Romaine hearts, Iceberg wedges, baby bok choy (paired with frogs legs), green beans, onions (sliced and speared). That's all I can remember right now.

Doing whole sweet potatoes this evening along with Prime NY Strip. BTW anyone else notice there isn't a scrap of pork to be had anywhere?
 
I like broccoli, cauliflower or brussels sprouts mixed with mushrooms and grilled in a heavy Weber basket. Oil (olive or sometimes toasted sesame) the mushrooms first, cut up the vegetables (sometimes I'll lightly steam the cauliflower) and toss them with some oil, salt, a pepper flakes, and then put everything into the basket over a medium to medium-low fire and put the lid on. Cook at least 15 minutes (I like the vegetables fairly soft) and stir fairly often to keep the char even.
I don't know why I didn't mention this earlier, but asparagus is good this way, too. Cut the heads off to leave them whole and then cut the stalks into thin discs so they cook at roughly the rate of the mushrooms.

Mushrooms go with everything. ;)
 
Bacon wrapped asparagus, Grilled romaine hearts and seasoned red potatoes. 😋
