I saw this Weber Recipe and I thought I would give it a go.
Avocados ready to hit the grill....I should have cut the peppers smaller

I'm using the gasser today for such a short cook

After 25 minutes at 250 I added the cheese, I also took the liberty of adding some bacon

Cheese is melting, almost ready to pull off the grill

Topped with more bacon

I also added some sriracha mayonnaise to mine

A nice lite meal, the baking really brings out the flavor of the avocado. In my opinion what the dish really needed was some acid, if I would have had a lime on hand it might have been better.
