Kim and I had both of our teams on TV today which is rare. She is a Bengals fan and I am a Cowboys fan. I couldn't think of anything better for a fun game day meal than Pepper Stout Beef. So here we go.
Got the roast seasoned at 8:00 AM to start the meal.
Set up the Weber for a long cook.
Chuck roast on.
Turned after an hour,
In the past my PSB cooks were ready to foil at the 3.5 hour mark, but this was a pretty thick roast and it wasn't quite done at that point.
At the four hour mark this is good enough for me so lets get it in the foil.
After 4 hours under foil got this reading and pulled the meat. Then put back
on the grill for about an hour.
During all this Kim prepared her great potato salad.
