I’ve never made red chimichurri before. Really fun and easy.
Blended it up then added a little olive oil
Flank marinated all day, really soaked up the juices!
Rubbed it with my Santa Maria rub and cooked hot and fast on the Genesis Gold B!
Made some Hasselbacks!
Finished it off with some sautéed spinach and one of our favorite reds!


After sitting for a bit the chimichurri got a nice kick of spice
from the chili
flakes! Really good on the meat and the taters!
