I did the torch through the vent hole method for a while, now I just use one weber starter cube under the weber charcoal chimney for all my smokers. A new wsm will run hot most of time till it gets a layer on the walls...I use only one vent(if temp gets up too high) and close the other two and keep the top vent fully open all the time. Water in the pan can help regulate temps but personally I hate it, I run the pan empty covered in foil or you could put fire brick in the pan.
Mine is thoroughly broke in and will run 250-280 with hardly any tinkering
you can run at 225 if you want, personally I think 250+ is better and less work for me
