This is what my grill looked like when I went to start cooking.

Starting sleeting when I start cooking so moved it under the breeze way.
Peruvian Chicken, one of my favorites and it has been way too long since the last time I made it.

I didn't get a plated photo, but I got a pic of the leftovers that will be going to my mother-in-law. Served with Cajun rice. I love this meal!

Great looking groceries Michael!

We're fortunate this year. It's supposed to be unseasonably warm (close to 50 degrees) with only a light breeze here on Christmas day. Great day to give the gift of applewood smoke to a turkey.

There are two recipes that I love and go back and forth with.


This first one is what I used for this cook. It is really good and I always have the ingredients on hand. I started trying to make Peruvian chicken when the pandemic hit as I stopped getting to go favorite work lunch spot. This recipe really hits on that desire.

However, then from this group lead by Tim, I was made aware of the second recipe below and wow it offered something beyond what I even I knew I was looking for.


This recipe really needs the ají amarillo paste and huacatay paste. I have been able to get those on Amazon consistently and it is a top notch recipe.
