I had 4 filet mignon steaks in the freezer.
About 2 months back something fell inside, and bumped the door open a bit.
When found, the steaks were thawed, but cold, so I refroze them.
A week later I grilled 2 of them, and they weren't great, kind of an old taste, so............
Yesterday I made jerky for Brooke with the other two.
Brought outside to cut, it took a yellow jacket about 2 seconds to find them.
Sliced thin, with K salt only.
KB coals, snake fashion to keep temp in the 115/125 range.
About 5 hrs. later.
Spoiled a$$ pooch!
Only me for dinner last night, and since Jo isn't crazy about beef ribs anyway, I made some short ribs just for me myself and I.
Brazilian Fire Rub, and pecan wood for smoke.
A couple hrs. later, and a sample taste.
Plated up with an, ahem, olive salad and bourbon for sides.
The ribs were the best thing that I've eaten lately!
Pretty spicy hot, but the beef stood up perfectly to the bold taste.
