Filet Mignon Dog Jerky and Fire Short Ribs

I had 4 filet mignon steaks in the freezer.
About 2 months back something fell inside, and bumped the door open a bit.
When found, the steaks were thawed, but cold, so I refroze them.
A week later I grilled 2 of them, and they weren't great, kind of an old taste, so............
Yesterday I made jerky for Brooke with the other two.

Brought outside to cut, it took a yellow jacket about 2 seconds to find them.

Sliced thin, with K salt only.
KB coals, snake fashion to keep temp in the 115/125 range.

Only me for dinner last night, and since Jo isn't crazy about beef ribs anyway, I made some short ribs just for me myself and I.

Brazilian Fire Rub, and pecan wood for smoke.

A couple hrs. later, and a sample taste.

Plated up with an, ahem, olive salad and bourbon for sides.

The ribs were the best thing that I've eaten lately!
Pretty spicy hot, but the beef stood up perfectly to the bold taste.

Love the pics but need a better one of the bourbon ;).

I need to do some dog jerky for my pooches, did you just slice it thin and cook a long time at real low temps?

It was just Jim Beam, I'm out of my favorite, Four Roses. :)

You got it, cut thin, and real low and slow until the texture you want.
 
I bet those short ribs were delicious! Specially when you said they wre spicy my mouth started to water...:)
 
You are the STAR of the day according to Brooke! And you get another STAR from me with those ribs. Dang i would eat both :cool:
 
Great post Bob...I was just thinking about some jerky! Love your post's with Brooke...I need to send Gerti over for some manners lessons cause you'd be missing some fingers about now!!

That looks to be a great cook. Your pooch was very lucky as was mine. I gave him the meat off one of the beef ribs I made today.
 
Bob, the jerky looks great, the dog is a fine looking lab, and the ribs look like I need some.
I have a question about the Brazilian Fire Rub. Looks like you have been enjoying it by whats
left in the jar. Do you think it would be good in chili?

Some of the rub was sent to a friend, so I haven't put that large of a dent in it. :)
Should be good added to chili I would think.
The ingredients are:
Sea Salt, Dehydrated Garlic, Spices, Paprika (color), Maltodextrin, Red Pepper, Dehydrated Red Bell Pepper, Turbinado Sugar, Parsley, Spice Extractives, Vinegar.

What is the gray design on Brooke's collar? Looks like a WEBER Grill:eek:
