Epic Back Rib and Spatchcock Chicken cook - happening now

I'm going to update this throughout the day as I progress, doing my annual cook for the family while my brother is in town from NYC.

Finally got the backyard 100% finished yesterday. We went from a small deck with 4 feet of grass to a pretty good sized space, but it wasn't easy. I'll spare the details, but let's just say that taking apart a brand new deck you paid someone to put in because they did it 16" too high, and didnt warn you that you be standing over the top of your fence on it sucks.

Did all my prep last night so I fired 4 racks of BA's on the kettle at 10am for a 6-7 hour no foil cook. I started using skewers to space the ribs late last season because I found they would lean I each other and not cook 100% awesome.

Cooking them with the smokenator, maple leaf bring and Weber apple chunks for smoke. My homemade rub on there as well, of course! An hour in and they are coming along nicely.

Stuart my bro!..Always tasty..Ill be there the flight is a humble 11 hours. But we travel back in time so we are there before you know it!

Okay, here's the rest of the pictures.

Started out with some mussels in Pernod cream sauce. Cooked these on my Red 22 in a cast iron skillet, but the cook moves so fast there were no action pics.

As soon as those were done I got 3 spatchcocked yard birds on the 18 WSM with no water pan in it. Seasoned with Weber Chicken seasoning and cooked with apple wood for smoke.

The ribs got foiled and sauced after they looked like this.
