Had some family over Saturday, so I cooked baby backs, beef ribs, tri tip, potatoes, corn, and bread all on the 18.5 WSM, and Performer kettle.
Started with a rib rack, then gave up on it.

Bob what can I say, as always a great cook and with family even better! I'm with you on the rack, one of the reasons I wanted a 18.5 WSM was because I was tired of fighting with the rib rack on the mini.

Bob, I like the handles you put on your WSM are they just hardware store metal ones or something special, also the pan underneath it I assume is to protect the wood deck?

The pan is from HD and made to go under water heaters.
I poked some holes in it to drain, but not large enough to do much good.
My 22" roti ring resides on top of the pan.

ps, the handles make it a very tight fit for the cover.
 
Man....I could eat out like that everyday my friend! That Tri Tip looks perfectly cooked. Nicely done!
