I got some CSR's on sale today and decided to cook them low and slow on the kettle. Also made some scalloped potatoes and Kim made a nice salad.

The long and slow cooking process made for some really tender meat. The potatoes were also very tasty. Thanks for looking!

WOW!!! You guys nailed that one. CSRs look delicious but those potatoes I'm all over those.

Robert would you share the recipe for the potatoes. From the pics its potatoes, onions, bacon, cheese and possible butter. Thanks Barb.

Sure Barb, super easy.

6 pieces of bacon, cut in half and fried until crisp in the CI pan.

Sliced 4 potatoes, was too many. 3 fit just right in that size of CI.

One sliced yellow onion.

Fry the potatoes and onion in the bacon grease with salt and pepper to taste for awhile then take to the cool side of the grill and cover and cook until soft but not mushy. Add one can of Campbell's Chedder Cheese Soup and about 3/4 of an 8 oz. bag of grated sharp cheese. More or less to preference.
Back over the heat, stirring often until the cheese melts. Chop up the bacon and sprinkle on the potatoes and stir in well. Cover and back to cool side until potatoes are soft. It seems like that was about 15 more minutes.

I made this up as I went so sorry if its not real organized. Ask any questions if you have them!

I really like what I'm seeing on that plate! After devouring several scoops of those potatoes along with a whole bunch of CSR's, I would need a serious nap.

Great looking country ribs Robert. I have been wanting to do a low and slow on those. You have inspired me to get off my butt and it...

Regards,

John
