Churrasco Flank Steak

with Brazilian cheese rolls, sausage, mini peppers, pineapple and a small salad.

Marinated the flank steak in chimichurri for 3 hours.
Started the gasser and got it to 400*for the cheese rolls.
Made an orange and red onion salad.
Got a fire going in the XL with RO hardwood briquettes and several small chunks of red oak.

Grilled the flank steak for 3 minutes per side.

While the meat was resting, grilled the sausages, peppers and pineapple.

One more big hit from you Robert! I’m very much inclined to fire that entire menu up next week!
Standing rib roast for wife’s son’s birthday tomorrow or it would be set for tomorrow!!!
If it’s anywhere as good as the Peruvian chicken you shared, you need to be paid for your talent!
I did the chicken for 10 the other night and it was a smash hit!
