Merry belated Christmas to all my BBQ Brothers & Sisters. Hope your Christmas was Merry, it would seem some of you had some serious weather to contend with. Hopefully everyone is safe and sound

FoodMaxx had a decent deal on Rib Roasts, picked up a 5-bone 11 LBS for $66

Trimming it not only required removing silver skin fat, but also had to cut the bones away, which worked out well as I was able to garlic butter between the ribs & roast

It was basically 120 at four hourish so we removed the ribs from the roast for the sear to 130

I very much enjoyed the smoked roast, I do think I prefer it roto'ed but not a bad way to go at all
 
Christmas Eve was all about Pizza & Crab (steamed) & shrimp

My neighbors from the UK are always good for a Sherry Log, very tasty, only God knows how many calories

My boy got into the Irish Cream a bit, he kept it down, but wasn't his usual run around like a maniac self

Forgot to mention, I used the Costco (Kirkland) pellets for the roast. at 225 it put out a steady blue stream of smoke, they get the ChuckO seal of approval

Don't forget to throw those 2015 tax returns on the fire this coming Sunday
